It’s such a gorgeous day, the weather is perfect for lounging around, so I wanted to make something that was quick yet yummy. I wanted to make something with rice, we love rice. This is a great go-to meal and it includes all your essentials for the food pyramid or my plate, rather.
Beef with Broccoli – serves 4
Sirloin Steak – 1 pound thinly sliced
Soy Sauce- 1/3 cup & 2 tbsp, keep separated (I used low-sodium)
Sugar – 1 tsp
Cornstarch – 1 1/2 tsp
Salt – to taste
Ginger – 1 tbsp peeled & slivered
Garlic – fresh minced or paste – 1 tbsp
Onion – medium sized, sliced
Broccoli florets – 1/2 cup
Green pepper – medium sized, sliced
Water chestnuts – optional
Sesame seeds – 2 tbsp
Red pepper flakes – to taste
To get thinly sliced steak, with a sharp knife cut on a diagonal across the grain. This works best the meat is cold, right out of the fridge (you can buy sliced meat if you prefer). In a bowl, to the meat add the garlic paste & 2 tbsp soy sauce, set aside. In a small bowl, mix together soy sauce, cornstarch, sugar, and red pepper flakes.
Heat oil in a wok, or large frying pan, add sesame seeds and fresh ginger, toast for 1 min, then add the steak, stirring quickly to separate all the pieces. While, the meat is cooking, Once the meat has browned, add onions, broccoli, and green peppers, cook until onions are soft, about 3-4 mins. Add soy sauce mixture and water chestnuts, stirring gently. At this point taste to see if you want to add any more salt. Generally you don’t need it since soy sauce is being used in the sauce. If you prefer some gravy, add 1/2 cup water and simmer on low heat for 5 mins. Serve with steamed rice (white or brown).
