Yum in a burrito!


One word, Yum.

Fabulous and filling.

There’s no other way to describe it. I had two of these bundles of joy and I was so full! Maybe I should have stopped after one, but I didn’t. Neither did the doc. We made our second and we looked at each other, told each other we don’t know why we’re making it and scarfed away.

I normally jabber on and on but tonight I won’t. It’s too delicious to make you read about my day and what the cats did and how I cleaned the house and all that other interesting stuff and not let you get to the important part!

Skirt Steak burritos

Serves 4

2 lbs skirt steak slices

salt, pepper

evoo (extra virgin olive oil)

1 can tomato paste

2 tsp chili powder

2 tsp cumin powder

2 tbsp taco seasoning

½ tsp paprika

4 cloves garlic, minced

flour tortillas

1 chipotle pepper in adobo sauce, minced (if you like spice, use two)

Guacamole (or avocado slices)

Shredded cheese

Thinly sliced carrots [seasoned with s&p, steamed]

Thinly sliced asparagus [seasoned with s&p, steamed]

Mexican Rice mix (preferably Knorr packet)

Season the steak slices with the following rub: salt, pepper, paprika, 1 tsp cumin powder, and 1 tsp chili powder.

Heat olive oil in a large, heavy skillet on medium high. Place the beef with the rub and sear on each side for about 8 minutes on each side. Remove from pan.

In the skillet, now on low-medium heat, pour 2 tbsp olive oil, tomato paste, ¼ cup water, the remaining spices (cumin, chili powder) & taco seasoning. Mix and add minced garlic and minced chipotle pepper in adobo sauce.

Bring back to medium high heat and cook this sauce for about 10 minutes. Once it has thickened, place the beef back into the sauce and cover. Cook on simmer for about an hour or until the meat is starting to pull apart.

In the meantime while the meat is in the sauce, make the Mexican rice by following directions on the packet. This takes about 7 minutes to make.


Once meat is ready, remove from sauce and pull apart with 2 forks.

Take your tortillas and head them over a pan until they are warm enough. Make sure you don’t over heat them so they become crispy!

Now take your rice and meat and the rest of your toppings and fold over into a burrito and enjoy the first delicious warm bite. The crunch from the veggies and the flavor from the meat and the rice will blow you away!
