My kind of Chicken Salad

Something so simple yet satisfying.

The doc was a little worried because it wasn’t as hearty as all the other previous meals I had been making. But I proved him wrong, muhaha. He had two and said “Mmm” a lot.

I thought of the idea as I was watching Reba. I don’t know why and I don’t know how. She was cooking and pulled out muffins and I said “Chicken!”

No relation whatsoever.

I know, I’m crazy.

I wanted to make something with ingredients I already have at home.

So I decided to make Chicken Salad for dinner. I only had a little over an hour when I made this decision and we had to eat at 8 sooo, I got a move on.

And you should too. Because this is awesomeee! And while you’re doing that, I’m going to go read Hunger Games. I’m probably the last person on Earth who hasn’t read or watched the movie. So I’m going to finish the first book and on to the next. All before I watch the movie. It’s the rule.

Chicken Salad Sandwich

4 sandwiches

2 boneless chicken breasts

¾ cup Ranch dressing [I used all natural Marie’s Parmesan Ranch]

½ cup mayonnaise

½ cup sour cream

½ cup diced celery

¼ cup chopped walnuts or pecans

¼ cup diced red bell pepper

1 tsp mustard of your choice

1 tsp garlic powder

½ tsp cumin powder

½ tsp red chili powder

½ cup turkey bacon (diced and pan fried, dried on a paper towel) – optional

Your favorite toppings (i.e lettuce, tomatoes, cucumbers)

Bread of your choice (I used 9 grain but french or croissants would be just as excellent!)

In a pot, bring water to boil and drop chicken breasts in and boil for an hour. [I know this may not sound appealing but your chicken will shred and mix in easily] 

In a large bowl, mix all wet ingredients and then mix all the dry ingredients. Add the diced celery, red bell peppers, and walnuts. (add bacon if you like, the doc LOVES it)

Once all the ingredients are mixed in, pop into the refrigerator for the remainder of the hour while the chicken is cooking.

Prepare your other toppings during this time.

Once an hour is over, drain the water and take your chicken and shred with two forks, pulling on the tender meat. Take all the shredded meat and mix into your mayonnaise mixture and viola!
